Turkey Sausage Meatballs with Cran-Apple Sauce

I am constantly looking for new, healthy recipes to try out for dinner...especially really easy ones, like this one! When my husband took a bite he said it tasted like Thanksgiving in a single bite! I think he described it very well...needless to say these were delicious, healthy and easy!




Turkey Sausage Meatballs with Cran-Apple Sauce

Ingredients:

  • 1 cup dried stuffing cubes
  • 1 cup chicken stock
  • 2 tbsp. EVOO
  • 1 1/2 lbs. ground turkey (blend of light and dark meat)
  • Salt and pepper
  • 1 egg
  • 3 tbsp. grated onion
  • 3 cloves garlic, finely chopped
  • 1 tbsp. poultry seasoning
  • 1 tsp. fennel seeds
  • 1 tsp. crushed red pepper

  • CRAN-APPLE DIPPING SAUCE:
  • 1 cup whole-berry cranberry sauce
  • 1 cup no-sugar-added organic applesauce
  • 2 tbsp. dark amber maple syrup


  • DIRECTIONS:







  1. Preheat the oven to 425°. Place a rack on a large baking sheet.
  2. Using a food processor, grind the stuffing cubes into crumbs, then transfer to a small bowl. Douse the stuffing with the stock to soften. 
  3. Drizzle the EVOO into a large bowl. Add the turkey; season with salt and pepper. Mix in the moist stuffing crumbs, the egg, onion, garlic, poultry seasoning, fennel seeds and crushed red pepper. Roll the meat into 1 1/2- to 2-inch balls. Arrange on the prepared baking sheet and roast until browned, about 15 minutes.
  4. In a small bowl, combine all of the dipping sauce ingredients. Serve with the meatballs.

    I served ours with brown rice because that's what I already had at home. But the recipe recommended couscous. I think any whole wheat grain would be great with it!
